ASIAN RICE SALAD

Ingredients:

  • 1 cup organic brown rice
  • 1 cup vegetable broth1 cup water
  • 1 Tablespoon minced fresh ginger
  • 1 Teaspoon lemongrass, white part
  • 2/3 cup diced carrots
  • ½ cup cooked peas
  • 1/3 cup sliced green onions

Dressing:

  • 2 Tablespoons fresh lime juice
  • 1 Tablespoon rice wine vinegar
  • 1 Teaspoon sesame oil
  • 1 Teaspoon soy sauce
  • ½ Teaspoon grated lime zest

Combine rice, broth, water, ginger and lemongrass in medium pan. Bring to boil, reduce heat, simmer until liquid is absorbed, about 40 min. Remove from heat, let sit 5 min. fluff with fork. Cool, stir in carrots, peas and onions. Combine ingredients for dressing in jar and shake until combined. Pour on rice and toss.
