PUMPKIN BARS

 Ingredients
  • 3/4 cup Lakanto Sweetener or other healthy sweetener
  • 1 Egg or Egg Replacer
  • 1/2 cup organic pumpkin
  • 1/2 cup organic coconut oil
  • 1/6 cup filtered water
  • 1/2 teaspoon Celtic Sea Salt
  • 1/2 cup Almond Meal Flour
  • 1/2 cup Brown Rice Flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon each of cinnamon, nutmeg & ground cloves
 Directions
Beat egg and add other wet ingredients and mix well. Add dry ingredients. Bake in a 9 x 13 pan coated with a little oil at 350 degrees for about 30 min. until toothpick comes out clean. Bars will be slightly brown. They will be thin and moist. Cool and enjoy!
Sprinkle with a little powdered sugar if you want.

Less pain, inflammation, and depression
